Elizabeth David had it easy. All she had to do was eat her way through France and Italy and translate the essence of the encountered cuisines for a ravenous, literate, English-speaking public. Fuschia Dunlop, on the other hand, went to Chengdu, the capital of Sichuan in China, where she ended up the first foreign student enrolled at the Sichuan Institute of Higher Cuisine. That was nearly 10 years ago. After annual return visits and endless research she has produced, in English, a magnificent introduction to the food and foodways of Sichuan. Perhaps it begins when she explains xian, "one of the most beautiful words in the Chinese culinary language." Sichuan cuisine, renowned for its spicy notes and hot flavors, is famous in Chinese history and lore for its variety and richness of tastes and layers. Englishwoman Fuchsia Dunlop spent several years in Sichuan, studying first at the university, then at Chengdu's prestigious cooking school. Her fascination with the food of China's obsessively gastronomic province has resulted in Land of Plenty, a comprehensive collection of the best Sichuanese recipes. Even those conversant with Chinese ingredients may profit from Dunlop's introductory glossary of Sichuan foodstuffs and kitchen implements. Her recipes cover those delicious dumplings and other snacks often sold from pushcarts on the region's streets. From there she moves forward into main dishes on the order of Sichuan's noted Ma Pou Dou Fu, a spicy melange of bean curd, ground beef, and chilies. She offers several variations of the dry-fried green beans so popular in American Chinese restaurants. The best Sichuan cookbook I've come across

I was very surprised when I found this book in this library, because authentic Chinese cookbooks are difficult enough to find, and anything regional and non-Cantonese even rarer. I myself had never been to Sichuan, though my family did often dined at excellent Sichuan restaurants in Taiwan.

Before I proceed to the recipes, let me state that having read the book several times already (!), this is by far the best regional cookbook on Chinese cooking I've read in English. The author has a talent for combining the precise instruction needed for writing a cookbook and a poetic flair for capturing the local attitude to food. Knowing that most of her audience would likely be unfamiliar with daily life in Sichuan, often a mystery even to outside Chinese, she details the street life there. One of my favorite part is that consequently, her cooking is mostly based on home style and street food rather than haute banquet cuisine (though there are a few recipes of those too). I find this a prudent choice, as banquet food are almost always too elaborate for home cooks, and few things reflect regional cuisine as well as street food.

Most of the recipes are pretty straight forward, and addictively delicious. I've made some from the noodles section are my favorite, as I'm a big fan of snack food. Most of these food do not require more than a good cleaver, wok, and standard kitchen equipment to make. However, the Sichuan peppercorn is an absolute essential. Regarding to another review's warning, I believe the ban on fagara has been lifted, given that the pepper be subjected to high heat before import. Simple googling will turn up the sources.

Another caveat, though it's not the really the author's fault, is that there were surprisingly few vegetable dishes, and even fewer vegetarian. This may be surprisingly given that most of China subside on primarily vegetable-based diets. However, there are actually not that many famous Sichuan vegetarian dishes, probably because they are seen as peasant affair. For vegetarians, I'd recommend borrowing this from the library or friend and copying down the dozen or so relevant recipes (after reading the entire book of course).

Lastly, there are very few sweet dishes. This may bother some people, but sweets really are not part of daily traditional meals anyways, save for the complicated holiday specialities, so in a way I'm glad she left them out.

I really am glad this book come to being. I don't have much actual complaints except that I wish there were more pictures. There are some here but not many, and given the unfamiliarity of most people to these cuisine I think photos would help. But otherwise, a new favorite and a real standout.

Made back the cost of the book in Kung Pao Chicken dinners

There are no steamed dishes but mostly require wok frying so the recipes aren't the healthiest but they are not that oily either (two teaspoons of oil in the wok and one teaspoon of sesame oil in the sauce for the Kung POW!)

The layout of the book is encouraging and I had no problem reaching for it when I am at a loss over what to cook for dinner. Luckily I have chili peppers and sichuan peppercorn in my larder now so I am well-prepared to tackle these recipes which call for simple ingredients but the resulting flavors are complex and addictive. Once that ginger meets the sichuan pepper infused oil, one can taste the deliciousness of the dish by fragrance alone.

I also understand what Chinese takeout food is all about now. These flavors are crowd pleasers and an unskilled cook like myself enjoys a 100% pass rating from picky eaters when these dishes are served.

This is a perfect book and I laugh at Fuschia Dunlop's photo because I think her smile is like my inner smile when I see or think of something good to eat. My only regret with the layout is that the order of the ingredients for the marinade and the sauce are not in the same order so that if I need cornstarch in both liquids, I can use one measuring spoon for two ramekins.

Because of this book, I purchased sichuan peppercorns, my first ever pricey knife, a Krups coffee grinder, more sesame oil, two bottles of Jonesy port and more cutting boards. The lip smacking flavors of Sichuanese cuisine are that motivating.

Best cook book every written. Period!

After cooking every single recipe in this book, I can confidently say that this is probably the best cook book every written.

Fuchsia's commitment to tradition and authenticity is evident and her instructions are clear and concise. Even more challenging recipes such as tea-smoked duck are remarkably simple if you plan ahead accordingly.

Great Hitman Chase Thriller!

Chris Holm knows how to put together a mighty fine thriller, and with The Killing Kind he’s at his frenetic best.

While dueling assassins are old-hat in the thriller genre, Holm taps into a quick and easy rhythm that will keep readers glued to the page throughout. If it weren’t for the day job, I could have easily plowed through this book in a day, the pages kept turning so easily. In fact, I’m not sure that I’ve read a game of cat-and-mouse this engrossing since Thomas Perry’s Pursuit more than a decade ago.

Holm ably crafts his chase story in triangular fashion, with Michal Hendricks, a hitman who targets other hitmen, Engelmann, the hitman hired to locate and kill Hendricks, and the FBI agents trying to drum up any lead they can on the killer ghost that is Hendricks.

Hendricks, an ex-Special Forces operator, carries around a good amount of emotional baggage and conflictedness over his actions, and although he murders for money he operates by a set of rules and basic morality. The sort of ‘do a little bad to do a little good’ bit. Engelmann, on the other hand, is a wonderfully odd duck defined by his contrary nature. European, well-educated, nicely tailored, and possessing all the affectations that go along with that, he’s a cold-blooded sort and brutal in his executions, yet intriguingly and scarily deft in his tortures of those standing between him and his target.

The world in which both men operate in is nicely defined, and Holm tackles the big questions surrounding Hendricks’s choice of employment – like how does he figure out who needs help and who helps him along the way – quickly and succinctly, guiding readers through the plausible steps that define how a killer of killers would operate. And rather than feeling bogged down by a series of endless chases between disparate groups all running toward the same goal, there’s a beautiful sense of energy guiding the story.

Equally important, Holm avoids some of the typical expectations of the genre that most readers would expect – there’s no burgeoning romance shoehorned in between Hendricks and the female FBI agent that’s been chasing his ghost for years. These characters are utterly professional and proficient in their aims, which is another aspect I appreciated here. The focus is on keeping the tension torqued and the action moving.

And the action – well, there’s plenty of it, and it’s apparent that Holm had a great time writing and constructing this book. The Killing Kind is as clever as it is enjoyable, and Hendricks lays out several well thought out traps to ensnare his quarry, with a finale that is both satisfying and more than a touch ingenious.

The Killing Kind is a seriously fun read, and more than a few scenes recalled for me the glory days of the TV show Burn Notice (which, if you haven’t watched, you need to!). It’s energetic, propulsive, and eminently readable. Fans of smart action-thrillers, you’ve got your next read right here.

"Rented" would actually be the right word...

I used to coach my middle school students to use the word "borrowed" instead of "rented" to describe getting a book from the library, but rented is actually be a better word for the loan of this book: it's a lot like an action flick in the new releases section of Blockbuster, Amazon Instant Video, Netflix or wherever you get your viewing stuff.

Cinematic and action packed with fighting, stabbing, and gunshots and silenced gunshots, The Killing Kind also has engaging characters. I loved Lester and Stuart, was grossed out by Hank Garfield, and wanted to lock Engelmann in a box inside another box inside a shipping container buried under a load of crushed cars. Each character provoked emotion; I didn't get any laundry done, didn't check the mail, didn't tune in to the news, and didn't finish installing our new bathroom hardware. I was too busy reading cover to cover to find out what was going to happen to my book people!

Start reading this one on a day where you don't have stuff you need to get done.

A wild, pulse-pounding ride with exquisite attention to detail.

FBI Special Agent Charlotte Thompson has an obsession. Over a period of several years she’s been tracking a man she calls the ghost, a hit man she’s convinced is responsible for an unusual string of murders—her ghost only kills other hit men. Neither her new partner nor her bosses at the Bureau are convinced. But as it turns out, calling her quarry a ghost is incredibly apt since, unbeknownst to Thompson, the target of her obsession is dead. Well, on the books he is anyway.

Michael Hendricks was once a member of a covert ops unit sent to perform false-flag missions for the US government. When all but two members of his squad—Hendricks and one other—were killed in a roadside attack in Afghanistan, Hendricks saw it as an opportunity to disappear and start his life over.

Upon finding his way back to the States, Hendricks decided to put his special skill set to use in a way he hopes will help him clear his conscience and earn redemption—he becomes a killer of killers. With the help of his friend, tech wizard Lester Myers, the other survivor of that attack in Afghanistan, Hendricks identifies people who are targets of impending “hits” and offers to take out the hitman assigned the job—for a price: ten times the cost of the hit. People who accept Hendricks’s offer live to see another day. Those who decide to pass, well, their track record isn’t too great when they decide to roll the dice without Hendricks as backup.

Things take an interesting, and potentially deadly, turn for Hendricks when a group that represents the various mob factions throughout the US in matters of importance to them all gets fed up with their hitters getting hit. Their solution? Hire the best freelancer in the world, a creepy, nasty piece of work named Alexander Engleman, a man who savors his job just a little too much, to track down and eliminate the ghost haunting their operations. Complicating matters even further for Hendricks, Special Agent Thompson has finally figured out his pattern and convinces her bosses to turn her loose, which sets the various parties and action in motion on an inevitable course for collision.

It wouldn’t be correct to say at that point The Killing Kind is off to the races, because the truth of the matter is author Chris Holm starts things off at a run right from the opening pages, when the reader joins Hendricks on a hit in progress, and the pace rarely slows down long enough to take a breath from that point on. With a wonderfully adept mix of straightforward prose and exquisite attention to detail, Holm takes both his characters and the reader on a wild, pulse-pounding ride that unfolds from the streets of Miami to the woods of Virginia, with stops in Portland, Maine’s Old Port neighborhood (home base to Lester Myers) and a riverside casino in Kansas City (where a deliciously convoluted and colorful confrontation occurs involving all the parties—with a Hendricks client and his assigned hitter thrown in for good, wickedly messy measure) along the way. The Killing Kind’s climactic showdown is one for the ages, with Holm bringing things to life with such detail and creativity it begs to be put on film…and will leave you casting glances about your house, amazed at the uncommon use some common items can be put to in the right hands.

Previously known to readers for his outstanding, intricately plotted and laced with dark humor urban fantasy meets noir Collector trilogy, Holm has both shifted gears somewhat and at the same time upped his game with The Killing Kind. While the Collector books were universally praised, appearing on scores of “Best of the Year” lists, The Killing Kind’s more mainstream thriller setup has the potential to open new doors for Holm and expand his reader base exponentially. And this would be a good thing for everyone, because if there’s one thing readers could use more of, it’s Chris Holm penned stories.
